Musaqa’a is a hearty, healthy, and completely delicious dish adored by Egyptians. Have you ever tried it with spaghetti? It tastes terrific!



  1. Sauté the onion and garlic in the oil over medium-high heat, adding a pinch of salt.

  2. Once they are translucent and starting to brown a little, add the tomato paste, pepper, thyme, and a little amount of water. Stir for a while, and then add the pasta.

  3. Serve on a plate, and then add the eggplant mixture.

  4. Garnish with basil leaves.
